Pasta is our go-to for a quick and delicious meal. The key to any great pasta dish is using fresh pasta. While I have never made my own, I am fortunate enough to have a vendor downstairs at the farmers market. Next time you’re at your local farmers market or specialty store check to see if they carry any, or better yet make some at home! The beauty of this dish is its simplicity and quality of ingredients. Its especially important to use quality ingredients to make this dish truly flavorful. Here’s what you need:
2 portions fresh red pepper pasta
1/3 cup raw peas
1/4 cup olive oil
1 shallot, minced
2-3 cloves of garlic, minced
2 tablespoons red pepper flakes
Bring two pots of heavily salted water to a boil.
Add the pasta and peas to the boiling water (separate pots) to cook. While they’re cooking, sauté the shallots, garlic and pepper flakes in 2 tablespoons of olive oil.
When the peas are ready, about 2-3 minutes, cool them in an ice bath.
Add the drained pasta, peas and remaining olive oil in the sauté pan and toss to combine.
Finish with salt and pepper and garnish with microgreens.
