arugula salad


This arugula salad is a delicious addition to any meal because it adds brightness and texture and color! We paired this salad with our quiche and it made a delicious dinner one week-night. This dressing is easy to make and it uses ingredients that are always on hand.

Makes 5 servings
6 cups of arugula
ΒΌ cup radishes, thinly sliced
2 tablespoons sliced almonds

2 tablespoons olive oil
1 tablespoon dijon mustard
1 teaspoon red wine vinegar
1 teaspoon honey
1 teaspoon shallots, diced
1/4 teaspoon sesame seeds
ΒΌ teaspoon poppy seeds
1/8 teaspoon pepper

Whisk together the dressing ingredients in a separate bowl making sure it is fully blended.

In a large serving bowl combine the arugula, radishes and almonds.

Pour the dressing over the salad and lightly toss.

Serve immediately
