Hello summer! The temperatures are quickly rising here in Cincinnati so we are cooling off with some refreshing pineapple salsa. This salsa quickly adds color and excitement to bland and boring dishes. We added this salsa to our tofu tacos, sprinkled it on pizza, and indulged in it with tortilla chips. Add a little spice to this salsa by substituting half of the bell pepper for jalapeno to create sweet and spicy goodness.

RECIPE
2 cups pineapple, diced
1/2 cup red onion, diced
1/2 cup bell pepper, diced
3 tablespoons cilantro, chopped
1/2 teaspoon lime juice
Salt to taste

DIRECTIONS
Combine the ingredients in a medium mixing bowl and voila, salsa!

We suggest letting this salsa sit in the fridge for at least an hour before serving, it tastes better when the flavors are able to mix together.
