After a weekend away, we found our avocados this morning at the peak of ripeness. They had to be used today or would inevitably go bad. Inspiration hit with a simple and delicious solution, guacamole. This was the perfect excuse to use up our avocados, lime and the tomatoes we may have forgotten about in the fridge. This guac turns out so delicious every time, which made it nearly impossible to get a picture before we gobbled it up. We left the chips across the room to avoid digging in before capturing this amazing dish!
2 ripened avocados, halved with the pit removed
1 roma tomato, seeded and diced
½ small red onion, diced
½ lime, juiced
½ teaspoon sea salt
½ teaspoon ground cumin
2 tablespoons chopped cilantro
1 large clove garlic, minced
Scoop the avocado meat into a large bowl. Add the lime juice and lightly mash. Continue mashing while adding the salt, cumin and garlic. When it reaches the preferred consistency, fold in the onion, tomatoes and cilantro. Serve with your favorite chips, or dollop it on top of tacos or a salad.
